Good for Your Heart Valentine Muffins


We've all heard about how dark chocolate is the full of antioxidants and can be helpful in lowering blood pressure and how strawberries are loaded with vitamin C that help fight against free radical. And somehow ever time, the combination of chocolates and strawberries because a food symbol of love for valentine's day. So, in honor of the upcoming Valentine's Day, I want to share with you my recipe for Dark Chocolate Strawberry Muffins.




Dark Chocolate Strawberry Muffins

2 C white whole wheat flour (you could use regular WW if you wish)
1 T baking powder
3 T dehydrated cane juice
1 tsp sea salt
1 tsp cinnamon
1 large egg
1 C + 2T vanilla flavored almond milk*
1/4 C canola oil
2 oz. dark chocolate, chopped
3/4 strawberries, chopped
oats (to sprinkle on top, optional)
Directions:
Preheat oven to 400 degrees.
Sift together flour, baking powder, dehydrated cane juice, cinnamon and salt in a bowl. Set aside dry mixture.
Combine egg, milk and oil with a whisk. Add egg mixture all at once to the dry mixture. Stir only until dry ingredients are moistened.
Fold in chopped strawberries and chopped dark chocolate.
Spoon in to muffin cups.
Sprinkle tops with oatmeal. (optional)
Bake at 400 degrees for 15 minutes. Remove from oven & let cool.
Enjoy!

*You could use some other type of milk, but if it is not vanilla flavored, I suggest adding 1 tsp. vanilla.

This sound yummy but I have never heard of cane juice.

Look in the organic food section for this. Organic Raw Sugar is close to the same thing.

Being that I am young and female I was told by local doctors in my area that my heart was fine, but ending up in the er one late night in another town we found our differently. So it is great to see these kinds of recipes!! I have you book marked and hope you do even more recipes like this!!
